Sausages have always been a love of mine; they can be as simple or as complicated as needed.  Take our traditional for example, nothing but free range pork, gluten free rusk and our in house seasoning blend OR our saucisse de Morteau, this stunning sausage using white wine is cold smoked for 2 days to get a real depth to the flavour!  We only use our aged free range pork and keep them gluten free.
